A professional baker will discuss with you first about your wedding theme to make sure that his work match to your wedding theme. May be he will ask many things that related to your wedding theme, from color nuance, bouquet, decoration, till your wedding dress.

If you plan the wedding on a limited budget you should tell your baker honestly on how much your budget for a wedding cake. An experienced baker can change small thing to be special thing using accessories that are suitable for you wedding theme.
See Their Portfolio
When considering the cake design, you have to see their portfolio. Make sure their portfolio has an aesthetic character that you want. Don't get fixated with big name. Sometimes big name can cause low in customer satisfaction. Intuitively they can think that your order is not worth, and the result may be unsuitable for you.
Taste the Cake First
Choose the flavor suitable for you & your guests. Taste cake first before you buy it. If there is any something that not suitable for you, you can discuss it with the baker. Consider on consistency in taste. Too much variation will influence the entire of cake even wedding atmosphere. So, make sure that the taste is a part of & strengthening the whole wedding theme. You would rather see another cake designer if they don't let you taste cake.
Fresh Flowers or Gum Paste Flowers
If you want to put fresh flowers on the cake, assure that the flowers are free from pesticide. Gum paste flowers that made with dough of gum paste commonly are more expensive than flowers. Fondant or Butter Cream Cake
Fondant (candy) shape may be look interesting, especially with attractive colors. But may be it is not as nice as its appearance. Whereas butter cream, hmmm yummy, but can melt easily. If it is the problem, just compromise. You can put butter cream layer under the fondant.
